I’m fairly new to this piece of software so sorry for my ignorance, but is there a way to open multple connect designers up at once rather than open one setup at a time?

No, only one instance at a time on any given machine.

If your need is to copy/paste items/resources from one Template to another, you can use the import option of the Connect Designer.
Go to the menu File->Import resources… and select the Template from which you want to import items. then “check” the items/resources you wish to import.
